Biography

Dr. Díaz Rios joined ANR as the first CE Specialist housed in UC Merced. She obtained her PhD in Nutritional Sciences from the University of Illinois after completing a Bachelors in Dietetics and a Masters in Medical Sciences at the University of Guanajuato in México. Her research and extension activities focus on preventing malnutrition in at-risk populations through the development, adaptation, and evaluation of theory-based, culturally sensitive approaches to promote healthy eating and feeding practices. In her role as the Co-Director of the Blum Center for Alleviating Poverty and Social Disparities at UC Merced, she is supporting efforts to understand and improve food security in local and regional communities. Dr. Díaz Rios is a Registered Dietitian, credentialed both in Mexico and in the US, with extensive experience assessing, diagnosing, treating, and monitoring diet-related conditions, both in clinical and research settings. She is currently serving as the ANR Associate Editor for Food and Nutrition.
