Biography

Dr. Karina Díaz Rios specializes in the application of cross-cultural adaptation methodologies to the design of pedagogical interventions to promote healthy food environments and the validation of tools to measure their impact. Her work is informed by the socioecological determinants of nutritional health with the goal of sensibly reach groups at risk of malnutrition. As a Registered Dietitian, credentialed both in Mexico and in the US, she has broad experience addressing diet-related conditions in clinical and community settings. She is currently serving as the UC ANR Associate Editor for Food and Nutrition.
